Alcohol : 12 %
Vinification : Destemmed harvest. Maceration for 24 days with air pumping over twice a day. Must is devatted, pressed and blended with free-run juice. Complete and natural malolactic fermentation.
Aging : 7 months on lees in old barrels.
The only input for this wine was a little sulfur +/- 20 mg/L of SO2 at the time of bottling. Unfiltered wine.
Total SO2 :  24 mg/l
Residual sugars: <2 g/l

Vinification :  Maceration of the grapes in whole bunches for 33 days with pumping over twice a day. Must is devatted, pressed and blended with free-run juice. Complete and natural malolactic fermentation.
