Vinification and ageing: Direct pressing. Natural vinification, without any input. Fermentation and aging on lees in fiber vats for 12 months. The wine took a year to complete its alcoholic fermentation. Racking before bottling. Bottling without filtration or sulphiting.
Wine without input, unfiltered, unsulphurized.
Total SO2: < 20mg/l
Residual sugars: 2 g/l
Domain: Perrault-Jadaud in Chançay
Terroir: Miocene sand soil on clay, Les Hauts Bois in the town of Noizay.
Average age of the vines: 35 years
Planting density: 6600 vines/hectare
Yield: 40 hl/ha Vineyard certified organic since 2017.
