Vinification: Maceration of the grapes, in whole bunches for 14 days. The grapes were picked daily until fermentation was complete. A few days without action, under pomace, before pressing.
Aging: Aging on the lees in old Burgundy barrels for 10 months, without topping.
Wine without input, unfiltered, sulphite.
Total SO2: 26mg/l
Residual sugars: 1 g/l
