Vinification : Maceration of the grapes in whole bunches for 14 days. The grapes were pigeonholed every day until the end of the fermentation. A few days without acting, under marc, before the pressing.
Aging : Aged on lees in old Burgundy barrels for 10 months, without topping up.
Wine without input, not filtered, not sulfited.
Total SO2 : 26 mg/l
