My very first cuvée, well supported, vinified with the advice of Claude and Farid.
Grape: Sylvaner
Alcohol: 14.5%
Vinification: Very ripe harvested grapes. Maceration of 8 days whole bunches. The grapes were trodden 3 times during the maceration period.
Aging: 10 months on the lees in old barrels.
Wine without input, unfiltered, sulphite
Total SO2: 14mg/l
Residual sugars: 1.4 g/l
