Grape varieties: Chasselas (95%) and Muscat (5%)
Alcohol: 11%
Winemaking: The Chasselas have undergone direct pressing. To the juice of the Chasselas, I quickly added the fermenting juice of the macerated Muscats (6 days of maceration in whole bunches). First vinification in stainless steel vats. Arrived at the desired sugar density, I bottled the wine (ancestral method) to make a Pet Nat. After aging for 6 months, the wine was disgorged.
Wine without input, unfiltered, unsulphurized.
Total SO2: 9mg/l
Residual sugars: 0.6 g/l
This Pet Nat was vinified with grapes from Domaine Sylvie Faller in Saint-Hyppolite.
Terroir:Clay-limestone soil in the town of Saint-Hyppolite.
Average age of vines: 35-40 years
Planting density: 4500 vines/hectare
Yield: 80 hl/ha
The Domaine Sylvie Faller vineyard has been certified organic since 2021. It was in its third year of conversion when the grapes that make up this Pet Nat were harvested.
