Grape variety : Pineau d’Aunis

Alcohol  : 12 %.

Vinification : Destemmed harvest. Maceration for 24 days with air pumping over twice a day. Must is devatted, pressed and blended with free-run juice. Complete and natural malolactic fermentation.

Aging : 7 months on lees in old barrels.

The only input for this wine was a little sulfur +/- 20 mg/L of SO2 at the time of bottling. Unfiltered wine.

Total SO2 : 24 mg/l
Residual sugars : <2 g/l

2017

Grape variety : Pineau d’Aunis

Vinification : Maceration of the grapes in whole bunches for 33 days with pumping over twice a day. Must is devatted, pressed and blended with free-run juice. Complete and natural malolactic fermentation.

Aging : 7 months on lees in old barrels.

Terroir : Clay soil with an omnipresence of flint.

Average age of the vines : 13 years

Plantation density : 6500 vines/hectare

Yield : 30 hl/ha
