Grape varieties : Pinot Noir 80% and Pinot Gris 20%.

Alcohol : 12 %.

Vinification : The two grape varieties, although vinified in the same way, were vinified separately. Maceration of the grapes in whole bunches during 14 days. Pigeage every day until the end of fermentation, then a few days without acting, under marc before pressing.

Aging : Aging on lees in oak barrels of 500 liters for 10 months. Then racking, blending for bottling.

Wine without input, not filtered, not sulfited.

Total SO2 : 13 mg/l

Residual sugars : 0.5 g/l

Average age of the vines : 50 years

Planting density : 5000 vines/hectare

Yield : 40 hl/ha
